Cable or hydraulic clutch
First, if you just added a cable with a few more inches, there shouldn't be that great of a difference in lever pull... they screwed up or didn't do something correctly...
As far as switching your clutch, you couldn't give me a hydraulic clutch.... their engagement zones are not adjustable, there is another complete hydraulic system to maintain, and the cable clutches I've had on all my bikes have not given me one bit of a problem...
What did the dealer use for a cable? There are some very good cables out there that can reduce resistance and lever pull on their own; Barnett HE (high efficiency) cables, HD Diamondback and Magnum are all considered better than, and easier to pull than, Harley OEM cables....
Then there are other products that can further reduce the lever effort/pull that replace, change or add on to the clutch cable ramp under the clutch release cover.
Cables are simple, easy to maintain & repair, mostly trouble free, fully adjustable, and have many options to reduce effort/pull..... I just don't see the need for a hydraulic clutch....
