how does this work in an area w/ no cell service?

One thing has nothing to do with the other. This location data is embedded in the image Metadata.

It works just fine. As long as you don't have a Jitterbug, your phone gets location data via GPS.

so for those of us who are luddites, what can i do with these pictures that have been geotagged? how can i 'see' this location in the picture?

My wife takes tons of photos and we use to have same problem. Now she always take pics of road signs, park entrance signs or anything else that will mark where we are along the way. Then we can remember. Would be hard to do if your by yourself but take pics of anything that will jog your memory when you stop to take pictures. Then when you get home you can tag them and delete the reminder photos. You could also keep a journal of dates and times. All modern digital camera stamp the pictures with a date and time.

Just look in the info or details of the image files, and the location info will be there.

Without a data connection there's no map to project on (unless downloaded beforehand if one hops through those hoops). Of course, if you're just driving around your own town it's probably not an issue, but like the OP is planning, I've done 10k tours and for large parts of it there was no cellular data available in many areas (mountains, desert etc), though my Garmin GPS worked fine in those locations.

Other issue w/ leaving a phones GPS on (at least for Android) is it leaves you open to being tracked.

Lots of people do. I know I do. My OL does. My friends are do. In fact, I don't know know a single person personally thats uses a dedicated GPS unit on a motorcycle.

It takes about 5 minutes to download an offline map. Not many hoops there.
