I'm a big guy and my wife and I were often riding at around 1700 + Lbs with all the crap we'd take with us. I put a better tire on the back and the handling issues I was having were fixed without having to address rear suspension, still using the factory shocks. tire choice makes a huge difference.

do you drive a car every day? or ever? if so alot of cars have under 1000lbs of available payload. pickups have more payload, but cars arent made for many big people. did you just ignore it? im probably over on my weight ratings too when im 2 up, but by less. some of the shock companies sell shocks with higher spring rates to handle the weight better. theres nothing you can do to increase gvwr, but beefing up suspension will make it more bearable. personally, im trying to also make better choices for myself and cutting my bull sh#t intake. i need to do better but its tough.
IMHO you have pushed way past the published limits and the real life limits ( published plus safety factor)
I am a big guy myself, and when I put someone on the bike and we are still under the published weight limits, I can feel the extra weights effect on the braking, suspension, in the way the tires are acting, etc.
Would you ever be able to forgive yourself if she was hurt because the brakes took longer to stop than they were designed too.
Please don't take this the wrong way because I need to do the same myself ( my left hip is in agony from carrying too much weight so my diet starts tomorrow I swear) but now might be the time to try to drop some pounds so you can safely enjoy two wheels together. I can't fly anymore because my weight is 40 pounds over what the plane's weight and balance calculations will allow, and my CDL is now limited to in state only due to my being 40 pounds over weight.... so I am in a similar position.
As I said above, I am not trying to be unkind, I am genuinely concerned about your health and safety.
@Ultra103 Can you at least share with us what the maximum load @ PSI is? I'm going to guess you are using a car tire.
1279 Lbs at 51 PSI for the particular one I run (Quatrac SL). There are a ton of choices, I was looking mainly at the 400 AA ratings since my wife has started riding her own bike. I run 36 PSI on my rear and 40 on the regular front.
the tire load rating is just one consideration, there is weight on the bearings and a lot of other variables,, right down to the thickness of the metal in the frame
