Adding an oil temp dipstick gauge is a good idea. The max temp you want to see the oil at, in the tank, is 230 F.
Following is taken from the HD manual-
We have many bikes running 2 oil coolers. Do NOT use a T. The path of the oil should go from the engine (oil filter), to one side of the first oil cooler, then out the other side of the first oil cooler to the second oil cooler, then out the other side of the second oil cooler, back to the engine.
As long as you don't kink any of the hoses, there is no additional restriction, or measurable additional load put on the oil pump. There are passages in the engine and in the oil filter much smaller (restrictive) than anything in the oil coolers or cooler hoses.
So many folks talk about their bike being just fine running the oil at 250, 275, 300 and more. It is not.
I've read a lot bout oil coolers, looked at the various brands etc. I kind of don't like the way they piggy back on the oil filter, in my mind it just introduces yet another potential weakness to leave me stranded at the side of the road. As usual I see things my own way, I'm also cheap or poor either way same end result. I have a 2011 Ultra (103) I see my OEM oil cooler and think well, replacing that would be reasonably cheap and easy, I could install a larger unit with or without a fan or two probably for a few hundred bucks, or less... Then I get to thinking, what about cutting one of the lines or replacing--- whatever and adding a second oil cooler of about the same size to the same loop, either stacked with the OEM or attached to a frame rail, whatever..
The question is, would I create any issue interrupting the oil line and installing a second oil cooler to the same loop? Or should I just replace the OEM with a larger unit?

I might also suggest you find a different location to mount your oil coolers.
From the looks of the picture you posted you like to ride more than you clean.
I hate the low mount coolers behind the front wheel.
They get full of road grime and are hard to get at to clean.
I didnt realize how plugged up my old low mount was till
I actually took it off.
If they are full of crap and air cant flow through it
Then its just a worthless hunk of metal
Hanging on your bike.
While I don't even look my bike, I am paranoid of someone stealing oil cap temp gauge, to easy. And you would be screwed on road. Might not even see it.
