Around my state, I will lock my pistol in the bag if we are going into a bar. That is my biggest fear, for obvious reasons. So far, so good. I am looking for some wood to knock on...

Or at an event and nowhere near your bike?

Years ago, I had a pair of chaps that were bungeed to the sissy bar stolen outside a bar, but no problems with the saddlebags or trunk. I did replace the dzus fasteners with threaded ones, and I wouldn't leave valuable or "sensitive" items in them anyway.
I seldom, if ever, lock my bags.....my thinking is it's better for a thief to open them and see that they're either empty or just containing nothing of value than to destroy them to get inside. I'd rather they "look inside" and just move on.
I have never had any vehicle I own broken into. On trips, I keep my clothes and that kind of luggage in the bags. Everything I need quick access to, it anything if value is in the tour pak. That pops off and goes in the hotel with me.
My buddy had been all over from Sturgis to Daytona and every rally in between. Never locks his saddlebags anywhere. He's had 1 jacket stolen and it was when we were in Daytona 2011.
Back before I bought a house with a garage, I had to park in the street. One time somebody stole my RAM Mount (well, part of it). The part that was perch-mounted was still there.
I lock the saddlebags when away from the bike. Mostly to prevent the saddlebags themselves from getting stolen.
I too have never had my bags gone through. Basically, I'm trusting folk with my bike and the things sitting on it. From my jacket and helmet to sometimes a tank bag and duffle bag while traveling.
Some day, someone might rip me off. But since there's just not much I can really do about making my bike burglar proof, I don't sweat it, and try not to make my bike overly appealing.
