I have both an older GoPro5 and the Insta 360x3.

I prefer mounting both on the handle bars, unless my co-pilot is o
holding them.

This makes it very easy to turn them off and on while riding, monitor they are working or see a low battery warning.

I have never liked the fairing mount devices. The screw mounts on the fairing are not that robust and I would not want fairing damage. Just my opinion.

I always shoot in 5.7K so I can reframe later without losing quality, and I keep the camera close to avoid weird stretching on people or bikes in the footage.

I'm running a similar setup, and I noticed that editing can get super time-consuming if you're using the phone app. I switched to doing the editing on my PC instead—way smoother. I found good selection of GoPro alternatives on www.gigwise.com and picked a separate camera just for left mount - that helped with getting cleaner views without all the extra digging around. Definitely saved me some trial-and-error.
