Would a bad exhaust/header gasket cause the following symptoms?

Yeah, it could certainly contribute to those problems, as well as the valve guide dropping out of the head. Ask me how I know.
You can check it by having the bike running and CAREFULLY putting your hand down there around the exhaust and feeling for hot exhaust coming out, without touching the metal bits. Best to do it when the bike is cold. You also might try blowing some smoke in that area and seeing if it gets blown away from the exhaust. This is not to be construed as a recommendation to smoke.

I guess I ought to act quickly when i'm testing for it... the engine tends to warm-up quick, especially here in FL
Well, it shouldn't take much time to feel the pulses if it is a significant leak. They tend to warm up quickely everywhere. I dunno about causing the vibration, though. More likely the vibration caused the exhaust leak. You might want to look to other causes for that.
