Ya can always bring your own oils. I only run Amsoil or Mobil 1 in my engine and tranny and primary I go with HD Formula + By the way, the 1k service hasn't changed on the 08's from the 07's as far as what you need to do, so technically you don't need the manual to perform the service.
The dealer will put Syn III oil in your bike if you want synthetic but be aware that Syn III is not a true synthetic oil. I would supply the dealer with your choice of oil ( any good Syn oil such as Amsoil or Mobile 1). They will likely do this but some dealers wont.
Mobil 1 75/90 or Amsoil SVG (severe gear) 75/90 for the tranny. Mobil 1 V-Twin 20/50 or Amsoil Motorcycle 20/50 for the engine. If you can get Redline oils near you, Redline Shockproof Heavy is good for the tranny also

but what I did is had them use regular dino oils, and used that as a "rinse cycle".... ran it for 100 miles then changed over to Amsoil in tranny and engine, HD formula+ in primary
check Zanotti's for the SM.
Also check the bike over very closely after they're done for anything that looks out of place or different than before, and check trans. & eng oil level.
I like Amsoil, Lots of guys are using Mobile 1. You cant go wrong with either one. Merch recommends Amsoil for his motors and he has been putting out big inch performance engines for years.

I had the same situation for the $1K so I bought the V-Twin Oil Pack (20/50) from Redline (My Oil shop, a supporting Vendor) which gives you all the correct oils for the holes about $73 shipped. Also ordered the 07 Service Manual for $45 and Fix My HOGDVD set for $150. Picked up the O-ring kit with primary gasket ($4) and oil filter (8.95) at the dealer. If I had those part numbers I could have ordered those from discount biker.com where I got the manual and saved a few more $$'s.
So for under $300 I have the knowledge needed for this one and all future services, plus the know-how for installing my exhaust and other goodies. Oh, and I'll have better oils in my bike and hopefully reduce the noise and heat a little, too.
