I use HD chaps, Willie Gs, got a great deal in the clearance section at the dealer. They are unlined and I can ride in them comfortably from 28 to about 88 degrees.. Pretty versatile to me and added safety is a plus

Chaps are more for protection than warmth. If you want warmth,try long insulated underwear with jeans and leather pants over.
I've tried that but the leather really does cut the wind and that seems to help the most IMO. Would be the same as just wearing a Levi jacket with a heavy shirt instead of a leather jacket - leather keeps the wind from penetrating.
