Another vote for the Sony Cybershot. Use mine all the time even while riding down the road one handed. I bought a Canon case that attaches to my belt. While riding I can pull the camera out one handed, turn it on, look at the screen briefly, partially hold the button down for autofocus and take the pic. Nice pics too.

I have an older mini disc Sony Mavica.
Haven't found anything yet that I like better.
it was about $1100 back then.
It is bulky but has 10 power optical zoom and more digital.
Drawback is it is righthanded only.
Very difficult to take pictures while riding ( rh on throttle).
But does have the steady sureshot so shots aren't blurred.
ButI too am looking for something smaller and easier for
quick snapshots and keep this one for scenery shots
(and some of the scenery this one has seen)!

What Dyna Don said. There is a lot of difference between a point and shoot camera and the larger SLR's. I have the Canon EOS 30D with various lenses. If there is something worthwhile to shoot a picture of, pulling over and using a good set-up will do you proud. If your intention is to take pictures from the back of the bike while riding, I wouldn't want to spend over $200 on a camera that could possibly be dropped and also taking a picture while in motion does have some drawbacks (ex. focus).

Canon Powershot A640 is a great camera. 10megapixel for about $375. That was a year ago. It has great resolution and does video. The wife shot quit a few from the back of our bike when we went to Co, Ut, Wy and montana. We love it.

I use a Sony Cyber-shot DSC-W1. Great little camera for touring; my wife has taken some great pictures from the passenger seat. It has rechargeable lithium ion batteries but you can also use a couple of AA batteries in a pinch. It's four or five years old so it's probably obsolete by now.
I have a 256MB memory card and filled it on the Blue Ridge Parkway. 1GB of memory (SD card) would be better.
I don't think you could go wrong with a Sony Cyber-shot model.
