I'm experiencing the exact same issues ....'08 EGClassic, Rinehart duals, FuelPak, SE a/f, HD Stage I download.
Only does it when hot and taking offin 1st gear, exactly as described, you gotta over-throttle and it sounds like a "noobie"slipping the clutch.
Almost dropped her making a sharp left from stop..foot down, panic...extra gas and clutch work saved it...8[
Could it be the rear cylinder disable software (due to heat S. Florida)?
I'llkeep monitoring it and take it to the dealer asap for diagnostics and to have the the rear cylinder heat option disabled if possible.
Have an 08 EGUC,,now with 4k. Since new, taking off in first gear occasionally it felt like there was a 900 lb anchor attached to the bike,,not always, just occasionally,,just seemed hard to get it going in first gear. Clutch engages then bike just chugs for a few seconds before coming to life. Other gears fine and runs great. Figured after break in and new pipes, breather, etc at 1k problem would go away. Nope. Took it on long trip to hill country (live in flat Fl) and problem really showed itself, as hills just added to it. Again, only occasionally, and never when cold. Most often when motor is at operating temp or hotter. Easiest way to describe the problem is the way my riding buddy put it- "are you taking off in second gear?"
Anyone have any ideas? Have appt. to take to dealer,,just hoping to get some feedback from the unbiased folks on the forum!

Found a dealer who immediately recognized the problem...said it's the throttle by wire not properly opening the throttle body on occasion. \\; Dealer says they were able to "tune it out" with SERT, but didn't know how to handle it with Fuelpak,,,suggested I call V&\\;H which I will do and update the post.
