I'll try not to make this too long. I'm currently deployed to afghanistan and have a 09 SG on order. Fortunately my job has me sitting in front of a bunch of computers for 12 hours a day so I have a little time to spare. Since I've been on the forum I see alot of people say, why spend the money on a SG only to spend money adding a tour pak and other equipment then end up with a Ultra or EG. So I did my Homework and looked at the two bikes in detail.
When I get my SG, I'll have to add the Tour PAK, get a more comfy seat and floor boards for momma. But these thing would only be on the bike when we go on long rides not for around town or back and forth to work. About $1500, Give or take a few bucks.
If I was to purchase the Ultra, I'd have to take off the tour pak(get detach hardware), bag guards, lowers. Change out rear lights, I don't like the light bar. Change out the front lights, I don't like them either. I also don't like the "bumpers" on the front or rear fenders. I would wind up spending atleast a grand trying to make it look the way I would want it. Plus the CB radio and the extra set of speakers aren't that important.
Most of my riding will be solo, so for me the SG right out of the box is perfect. I can always spend a couple of dollars to make it more comfy, but there are just too many things I don't like about the extra stuff on the ultra to make it worth my wild.
Looks like you almost had some post-purchase dissonance.(sp?). To each their own. I went with a fully loaded Ultra Classic because when I want to ride my touring bike, I want a full touring bike. I have my chopper for around town and shorter trips. I'm very lucky this way.
If I could only have one bike? I'd prob. have chosen the SG. It is a good compromise. I'm sure you'll love yours. I do however think, you are highly under estimating the costs associated with the changes you are considering.

If you are speaking of the changes to make the SG more comfortable for touring. I priced all the parts including the 20% off from the dealer(was told by the dealer he'd give me 20% off parts purchased at time delivery) I planned on doing the installs myself.
for what its worth I agree with your approach to the SG. I have a RG and have done the same (tour pak, lowers etc) that are all detachable. Do most of my riding solo, so it a quick change over when my lovley joins me.

Have you considered the EG Classic? Same MSRP as the SG and there is not as much to remove to get the SG look, more color options available also. I have an 09 SG on order also but have been considering the EG Classic.
I believe the EG Classic would be the best option. You won't have to purchase a tour pak, you will have one. Won't have the extra speakers or lights on the tour pak to deal with. You might have to get the SG shock package, and change the spot lights and windshield, but other than that, you should be good to go. I think you will have less money in it this way as well.

I did consider the EG because it was the same price as the SG, but I like the color I ordered so more options there didn't appeal to me, and I still would have to deal with the light issue front and back, and the fenders. Also I don't know how long it will take me to replace the wheels and I like the SG's better. The look more robust to me
It's all about getting what you want and adding what you want. It's does no good to compare 2 different bikes because the Ultra has many more tricks than the Sg you did not mention to get to that price difference. You did what almost everyone does and figured what it would cost to add on a Sg of take off an UC or EG. I have a UC and love it and will not have any other model. You will love that SG because it's what you want and a sharp looking bike now stop looking at that parts catalog because your bike will end up costing more than a UC before you get home.
