You don't need to remove the fairing if you don't want to. Just remove the fairing cap where the switches are located and splice into the ACC switch as per the diagram.

If you use the "O/R" wire as the source the GPS will turn off with the ignition. If you select the "O" wire it will be switched by the ignition and the ACC switch, which would probably not be a good solution for most people.
