i looked for a while, and never really found a good alternative. There are various "covers" or "panels" that go over the existing dash, but not really much else out there than i have found.
If you want to have something different, take the dash apart and have it powdercoated or painted to match the bike or a contrasting color. I did that with the dash on my '04 and now it matches the black tank. A really low profile dash might make fitment of the speedo difficult not to mention make it hard to read ad the low angle, unless you're planning to move the speedo to the bars.

I'm trying to beat the rain/wind from Hurricane Bill on a trip to MA this morning, it is supposed to get nasty around here later today.
The powdercoating looked okay, but a $2.99 can of glossy black Krylon really did the trick. If I had known, I would have tried the Krylon first, it was a lot cheaper than powdercoating, but everyone will have to make up their own mind.
