The only two things that are always with me are: Tools, and Raingear. Everything else comes and goes with the specific ride... but they always stay, needed or not, I've got em. I've helped a lot of folks by having my tools, and it's as rewarding to me, as it is to those that I help. Just part of the unspoken code I guess, but I'm giving away my age with that one.
My bike is like my closet at home. i keep 1 jacket, rolled up very tight.
The wife on the other hand keeps her wallet, 2 changes of clothes, 2 pair of shoes, 5 hair brushes, her cell phone, a 40 - 50 degree jacket, a 50 - 60 degree jacket, her rain suit, her spare rain suit, her hair dryer, glass cleaner, a phone book, her pillow, BLA, BLA, BLA .......... wait....... she just pulled my jacket out of the tour pack. i'll be right back!

I keep a few tools, tire gauge, an extra shirt and jacket if I think I might need the jacket, a map, a cell phone, sunscreen, chapstick, a ball cap, gloves, sunglasses, clear glasses, and a couple of old rags/towels.
I ice down my Bud Light in the left bag, since I run a 2-1 pipe. Keep a spare helmet in the right in case I pick up a passenger... No seriously, a small tool kit, first aid kit, plastic wire ties, a spare kickstand spring, hooded sweatshirt, a couple do-rags and raingear.
