Grab Bars
I've heard that the grab bars enable the opening of the saddle bag somewhat. I'm running a Road King Custom if it matters and would like to hear from you guys if there is any truth to it?

If you are talking abut the horseshoe shaped bar that connects the rear of the fender struts, the goofy looking thing can be removed without any adverse effects as long as you retain the connection between the rear of the strut and the vertical brace alongside the fender. This can be done by using something like Autogem lights, or just sawing the rail off.
As far as the rail and the bags are concerned, one has NOTHING to do with the other.

I'm not familiar withe the Klockwerks covers, but if you are removing the strut covers you will see how the bar bolts to the strut and fender brace. Since you are using those covers, just hacksaw the bar off just behind the bolts. I think it's flat there.
