I have made up my mind to do some engine mods this winter on my 09 street glide. basically stock right now but plan on some head work and some boring on the cylinders. talked to a guy today about it and he said that the biggest he feels safe with is 103" on stock cylinders. talked to a guy yesterday that said no problem with a 105" bore. Is there a real big difference? how many of you have bores done on stock jugs and how much?
107 is tried and true over bore for stock cylinders. And.. there are vendors that can take you cylinders, bore them, fit them with pistons and rings, and send them back to you ready to go. A 'normal' Harley mechanic cannot readily obtain a 107 piston as the top piston companies have paired up with the top builders in the country for the 107.
GMR in AZ; Hyperformance in Iowa; and Hillside in NY. Any of these guys will answer the phone at night or on weekends to help you out. My personal vote is Hyperformance, as I have used them.
But... ANY one of these shops are top rate and you will end up with a better product than ANY SE type purchase.
ANother Big Bore option is S&S makes a 106 kit for 07 and up bikes that included cylinders, rings, pistons, etc. (like SE, but without some of the SE problems)
Enjoy! I just finished up the road you are embarking upon.
I have a 106 inch bike, with TTS tuner, Bog Boyz ported Heads; Andrews 54 cams; R&R crankshaft; Timken; etc.... and a D&D Boss exhaust.
You can shoot me a PM anytime for my own personal observations, etc. as one who has been in your shoes.

For someone not mechanically gifted, if you go with the mail order vendor option, do you predict a problem getting a local mechanic to install the reworked jugs?
NO. I think a 'mail order cylinder set' can be a boon to the local builder. The piston companies have made 107 a 'proprietary size piston". If a builder would do a SE kit... what would be the difference? (except a VASTLY improved product over SE!!!)
