Default Leather seats

What’s a good product that provides water and UV protection for seats and other leather items on the bike?

Any leather treatment. Harley sells one. I use Langlitz Leathers Leather Dressing which contains silicone or Obenauf's Heavy Duty LP (leather preservative). I have also used the HD one.

Meguiar's make a leather wipe that seems to be pretty good. I use it on my HD Brawler seat as well as my lid covers;

Hope this helps.

..... unless your running the $900 Road Zeppelin saddle there isn't any actual 'leather' on a stock HD other than the cross-hatched stuff on an RK classic.
..... I'm an Armor All guy myself.

The best I have found for conditioning is: http://hawg-wash.com/hileco.htm

For cleaning I use Lexol cleaner: http://hawg-wash.com/lexleatclean.html

Ive always used a product called Saddle Soap can be found at any tractor supply in the horse section. Or you may find it at a feed store.
