If you want to fit a stage 3 conversion you need all the bucks you can, to do that! I agree with the others, go for an earlier bike. Doesn't matter what state of tune it is in if you intend changing it a lot.
Too add to the information above, a few other differences:
1. HD did a recall on the valve seals used on the '05 model;
2. '06 was the first year of the Harman Kardon head unit/radio. This may be an issue for you if you want CB/XM/Intercom since the '05 and older models use a head unit from Radio Sound and those features cannot be added on to an existing RS radio that doesn't have them; the HK head unit allows you to add modules for the additional features;
3. '04 and newer models use speedo and tach gauges that are compatible with HD's spun aluminum gauges (CVO) and silver faced gauges (Street Glide/Road Glide).
4. '03 and older models uses a 130mm width rear tire; '04 and newer use a 140mm rear tire.
5. The throttle body on the EFI models in '06 is larger and uses different connectors than '05 and older models. This may be relevant should you choose to do performance mods in the future.
It's difficult to know at time of purchase what mods you may want to make in the future--our "wants" tend to vary based on the $$$ available, at least mine do.

PS: I bought my '04 in Feb. '05. If I was shopping now, I'd buy the '06 over the earlier models since it will provide the most flexibility for accessorizing the bike in the future.
