Full face only for her!!!! Most new passengers won't be aware of how her head will jerk forward when stopping, and a bashed nose in the back of your lid will stop all chances of her ever getting on again.
take it easy the first couple times out. don't get on the freeway, ease her into that. and like others have said have her lean with you. make's life a lot easer, when the rider and passenger are one.
I follow same guide as unome, I ready the bike, it is running in neutral with my hand on the front brake; the wife gets the go ahead and she gets on. As to getting off she awaits my alignment to give her the OK and she dismounts.
When we first started to ride 2 up she would "help" in corners, unnerving to have the bike oversteer to say the least and she almost dumped us, we had the long talk, she now plants herself into the sissy bar or the tourpak and stays there unless she needs to wriggle her butt and move for blood flow, she always warns me first as to that!!
heck. just throw on the back of you and go. she'll be fine. only thing she really has to do is look over your shoulder the direction your turning. it's really no big deal with a passenger. since we got back into motorcycling 7 years ago we've logged close to 50,000 miles to different parts of the country.

Tell her she can take what ever she wants.......as long as it fits in the left saddle bag. The right one is for tools, etc. and the tour pack is for my stuff.
Take off the tourpack, install a side car and take the dog instead... less headaches that way.... and you can use the dog to get chicks when you stop.... just saying..
Seriously like the others have posted you really have to cater to what she wants. You are in control and occupied. You put up with being cold, hot, wet road weary because it is part of the experience. For someone just sitting there it's not as amusing.
+1 on clear communication prior to her getting on and off and prior to you driving off. We always do the left shoulder tap prior to driving off, it is important to have her participate in the process to maintain her comfort level, which will make the experiance better for both of you.
