I went back and read your original post. If you are going with high compression pistons, say 10.5:1 static CR, then the 575 would be a decent choice. If not, and you are staying around 10.0:1, then the 525, and again, keep in mind your riding style.
As a side note, I just sold my 07 and will be picking up a Cherry and Merlot Limited next week. Great colors !

Not gonna build a 120 as I have really looked back at the money dumped into the bike, specifically the engine and I never fully utilized all that power, but it was fun to ride. This one will be a budget build, Heads, Cams, AC, exhaust and TTS....and go riding !
I just got back from a ride and had a blast dragging the floorboards in the canyons and generally hotdoggin, I agree with Dalton , 103", heads, cams, ac, exhaust, tuner. No problems and my brakes got a workout, more power would have just taken away from the fun and added what I don't want to do, make the ride on the edge
