You might look into doing a 103ci stage II with SE 255 cam. It develops most of its torque power between 2500 and 4500 rpm. 95% of your riding is done in that range. I ride the Rocky mountains as well, two up and loaded with gear. Some nasty switchbacks here and there. You'll need the strong low end torque this combo provides. And it produces a lot of reserve power for highway riding. But, you can do all sorts of other things to create an endless variety of power curves. So you'll get as many suggestions. I'm just telling you what I did and am very happy with it.
