No problem for the bike, but my wife hates 'em - they keep banging her in the back of the leg when she mounts and dismounts the bike. They are removed when riding 2-up, they'll be reinstalled to mount a 3 gallon auxilliary fuel cell on the pillion (for my Alaska trip).
If this works for you, I guess it's OK. I've never went that far to anywhere where there was no gas.
But I would opt'd for those angled saddlebag gas cans, one in each saddlebag.
Use the passenger area to carry my big Nelson Rigg pack.
I'd feel better with spare gas stored alittle lower and not right behind me.

It's actually fairly common in the long distance riding community and the dynamics aren't much different than having a passenger on the pillion. The cell weighs about 10 lbs, the fuel close to 20 and together they weigh a bit less than my wife.....
As for fuel availability, gas is a lot more available in the Midwest (where I grew up, btw) than places here and further west. There's even a spot on I-70 going west out of Green River, UT, where you don't see fuel on the Interstate for more than 125 miles - a bit different than gas every other exit <g> The other issue you will find is the lack of 24 hour gas since so many stations still have the old style pumps without PATP, especially when you're touring the back roads.
And, as noted, it'll only be there for special trips.

Here's a view of the clearance; in fact, the top of the saddlebag can hit the bottom of the Tour-Pak, but not the passenger handles.
