I've also read that the more "open cockpit" won't offer as much protection from rain as the batwing, and that the rider would be more apt to get cold in chilly weather which is a concern for where I live.

I did an Iron Butt SS1K ride on my 09 RG last fall (thread is here) and it was amazing. Like all bikes, you need to spend a bit to customize it to your riding needs and body type.
I would not put the buffeting into the equation. With just a little effort and not much money you can get the wind deflectors and a different windshield if needed to solve that issue with the RGU. The RG hands so light without the weight of the fairing on the bars and if the wind is blowing, that gets transfered to the frame since the fairing is mounted to the frame.
I also had my seat customized at a local shop (Bitchn Stitchn) - a local version of the service that Mean City Cycles offers, but I've heard the RGU seat is pretty sweet.
I don't think you can go wrong either way, but for me having the gauges a bit further out and the fairing mounted to the frame was the deciding factor.

I had the same problem of choosing between the 2011 Limited or the 2011 RKU.
I solved it a real simple way: I brought my wife to the dealership and showed her both and she solved it for me.
She picked the Black limited as the Black RKU was "Ugly" go figure!!!!
But still, I'll someday get a Fuggly.
If I went with the RGU I would want a shield similar to this one (this is UPSGuy's Roadie, a sweet ride for sure!):
My concern with a shield this short and the "open" cockpit is rain, wind and cold. I'm 6'1" so it may blow me around a bit. I've got a short Clear View shield w/recurve on my FLHT and it does great -- wish I could ride a RGU with a recurved short shield to see how it does.
Thank you for the compliment and yes the shield does look good but is useless at hightway speeds, I do have the 12' verison for long trips but I think im going to try a Wind Vest. btw GET THE ROAD GLIDE!!!!!!!!!
