If you have the loot go for the 120r. Otherwise as big as you can afford and anything bigger than a 107 I would definitely get the crank balanced and welded. Also get the auto compression releases. I hate having to hit my Manuals all the time. I have a 107 kit and I love the power of it but you will always want more. Just like a good shot of .... Well you know. Seriously as big as you can afford and handle.

You're basically spelling out the 103 stage IV kit, which is a pretty good starting point for a top end rebuild. I'd go 107, though, using the same cams and heads, have your stock jugs bored and use the CP 107-3 forged popups. Get it tuned, upgrade the clutch with a vpc and go ride.
I love my 124" as it provides plenty of torque which equals fun. If I were to do it all over again, I'd just go with a big bore kit, a good set of heads, cam and exhaust.
A larger engine will run hotter and use more fuel. At times I miss my little 98 cu in setup that netted 114hp/119tq and still clicked off 47 mpg while oil temps never exceeded 225 degrees. On a warm day my 124" sees oil temps of 250 but then again I'm dragging a house besides me.
