Almost everyone ends up doing a "stage 1" which is to open up the breathing of the bike with free flow pipes (many different types/costs/sounds available, a free flow air cleaner and a EFI air/fuel management system, (Power Commander, SERT or many others available).
Once you do this, the bike will run cooler and have about 10% or more power. This is usually enough to make the average rider satisfied with the power. YMMV
I just went from Yamaha Road Star Midnight Silverado to a 01 Ultra Classic and I can tell you that I was quite surprised as to the power the Ultra had. It's does'nt pull has hard as the Road Star, but man, is it smooth on the highway! I just got it Saturday and it's been raining here ever since. If you want something with power to spare maybe a Triumph Rocket III is for you, but for me, the Ultra classic is a Cadillac compared to the Road Star.

that is what I am selling right now. an 05 midnight. maxair filter and HK sideburners. I do want the caddilac of the EG and I am sure I can find the power I want even though thats not what it is for.

....... then you really oughta stick w/the LTD. It's got more bells & whistles than the UC but leaves off some of the excessive chrome that the Ultra carries like the front fender bumper and horizontal bag guard rails.
..... If yer not gonna get a Road Glide, you may as well go with the 2nd best ride that MoCo builds. .....
I am with Peg, bought a classic, pull the box off and slap a roadglide seat on and when you wife or girlfriend ....or both wants to ride toss the box on and the stock seat and roll. The classic has the best bang for the buck.
