Ya'know this sounds like one of those old school stories from years gone by, 3 guys, 3 bikes all up on benches swapping parts and sh^t over a beer and a handshake. Got to miss those old days.
Get the money in the pot up front and the agreement on paper. I know it shoots the "3 friends" thing in the head, but if anyone thinks of backing out someone is stuck holding the bag. If they are really as good friends as you say, then they should understand that it is just to cover EVERYONE'S behind. Good luck with it though, I love wrenching on challenging projects.

Good luck with the build. And be safe. I'd at least run a pump for the B / O to scavenge. Flywheels will slow down otherwise. But you know that. Do I know you from another site? Something US .com? Lol
