255s if you are going to stay pretty much stock. If you are going to do a big bore then spin the wheel on all the options. BTW, once you start with cams, the quest for more power never ends.
If you are doing it yourself you'll need some tools: inner cam bearing puller/ installer tool, cam/crank locking tool. As well as the kit from fuel Moto and the cams of course.
Fenderzip is spot on... cams are like oil products. Everyone thinks their choice is the best one...
The 204's will give you the 'cam lope' you want, but there are better choices for a heavy bike for the power band your looking for.
SE 255's - peak power quick (big curve) then drops off ~4250-4500;
Se 259e - similar to the 255's but with a flatter peak for a bit longer and doesn't run out of steam quite as early-- just edging over the 255's on a good day.
S&S 551 - I happily run these-- good power from ~2000-2250 RPM but run out of steam ~4800 revs. I don't have any comparison with other cams but when I twist the wrist they pull very well (as any of the above would feel too).
If your going to pull the rocker boxes I'd just re-use the OEM pushrods.
PS-- Personally I wouldn't choose a cam on the basis of how it sounds. The 204's will work but are really made for a lighter bike. Having said that guys do run them on baggers and are happy. All depends on what makes you 'happy'....
Just my thoughts and I too await comment from others.
I would say the 255's and the 259's are not all that close based on thier specs (I would say the 259's need a bit more compression but with the added compression probably make really good numbers). I also know from experience that 204's are great bagger cams (I ran them in my 95" egc). they have an intake closing of 34* which brings on the torq nice and low in a 103" but more duration then the 255's so they should run out longer but still have nice low end.
