Thanks guys!

I only paid $60 for the seat off eBay so since I can't/won't ride the seat to break it in because I will not ride the bike unless flat-footed (for my personal safety concerns) $130 or so to do the mod still puts it less than a new one from Mustang!

I am planning on calling them and having the memory foam and lowering it 2".

Not sure if they'll be able to take 2" off of it, but it's best to call MCC. Good luck and I hope it turns out for you. Flat-footing is a big deal if you ask me.

I was able to sneak in a 30 mile ride with the MCC modified Mustang Vintage Solo before it started to snow.

The seat felt very good, maybe even more comfortable than the stock Mustang seat. I don't seem to sit any farther forward even though the mod was supposed to move me forward about 1/2". I am definitely sitting lower (not 1" though) and that allows me to comfortably flat-foot and gives me room enough to put a sheepskin cover on without getting any higher than the stock Mustang height which was definitely "ride-able". I'd say that functionally, the modification is a success.

My only concern is that the cover doesn't look quite as nice as before since some very subtle dimples and lumps are visible. I'm hoping they smooth out over time as was mentioned in a previous post.
