When he heard the scraping, maybe he should have come off the throttle immediately. He did not. You can hear he did not when you listen to his pipes.
The above is not an analysis of what went wrong for there is way more to say than what I said above about it.
I am just confirming, knowing the limits of the lean angle is good to know. Also when the bike does scrape, it does not create a WHAT IS THAT knee jerk reaction that could be unpleasant.

Actually letting off the throttle would make it worse. He should have moved his entire body to the inside of the corner and as far off centerline of the bike as possible.
I was looking at your signature photo. That looks like the falls outside of Highlands NC on hi way 28.
I love that road and its is a good one to get that lean on.
