Default 2000 carbed Electra Glide questions

I have a carbed 2000 Electra Glide Standard I just bought. It has 8500 miles on it. It had a hi flow aircleaner and K&N filter when I got it but was otherwise stock. I found a set of Rush slip ons on craigslist so I bought them with three sets of baffles for $125.00. I am currently running the 2 inch baffles.
I took it out the other day on about a 20 mile trip and then in town to my house. I took the new plugs out later and they are white. Not tan at all.I do not think it has ever had the carb adjusted and I am wondering if it is safe to take it on a poker run tomorrow? Probably be about 175 miles total with temps in the mid 70's. My wife will be riding with also. I could put the stock mufflers back on if you guys think its best. I guess I am worried about running to lean? What do you guys think?

I got the same bike had 12,000 last year the bike sat for a long time so carb was gummed up pretty bad, so had it rebuilt they said to bring it back after 100 miles to check the plugs, I brought it back at exactly 100 miles told them I did want to burn anything up they said I would have to ride a good while before it would damage anything so I wouldn't think 200 miles would do any damage

Put the stock mufflers back on until you get the carb re-jetted.

White means the plugs are hot and you're running aluminum pistons.

Good advice here. Depending on where you live in relation to sea level, a .48 pilot jet is in your future.

You need to knock out the welsh plug on the bottom of the carb that plugs off your low speed mixture adjustment. Then, with the bike warm, adjust it to the mid point between making the motor slow down as you twist it both ways. That is usually around 2 1/2 turns. If it's still lean, spitting back throgh the carb is the best indicator that it's lean, you'll need to drop the floatbowl and go up one size on the pilot jet. Easy job, jet is cheap. 45 is usualy stock 46 or 48 should do it. 45 often works fine if adjusted right.The pilot jet is the one higher up and not having the needle in it. The needle rides in the main jet. Then re adjust as above.
