I have 255 cams and a Pro Pipe Chrome. Currently getting close to 40 MPG unless I ride it hard in the curves with lots of accel / decel, downshifting and getting on it in the straights.

I just ordered a Set of Cobra headers and Vance & Hines Monster Ovals. I got tired of the loud droning of the Pro Pipe on long trips. I hope that I can maintain the same level of performance after the swap.

Dragos is going to be making a true dual, Frank gives you a guarantee about the performance of his pipes.

VH Power Duals did the trick for my bike on the dyno, the power chamber produces great benifit and allowed me to stay with a dual setup.
I wouldn't change a thing - SERT, 255, 40mpg.

Stock header, 1st Gen Jackpots, FM 107, PCV with auto tune. I recently leaned my A/F ratio to 14.2:1 in the cruise range (i.e. < 3K RPM and < 40% throttle) The last two tanks of straight highway @ 65-70 MPH netted 46.95 & 47.17 MPG. The one tank that was mixed riding netted just over 40 MPG. The stock non-catted header is not that badly designed. I can't justify spending the money right now for something that won't gain much more than what I have.

I'm not sure what the difference is with these guys that claim 40+ mpg after a build. My advice: Forget the numbers. If you are happy with the bikes performance then leave it alone. You could spend a lot of time and money chasing those few extra mpg and wind up with nothing better than you have now.
I also have an '09 street glide. Built 103 w/ thunderheader 2:1, dyno 106hp 107tq 260se cams stage IV race kit. 39 mpg ave, 44mpg two up on trips

Fuel Moto 2-1-2 head pipe. I think there's one in the classified section right now.

106 hp out of a 103 is impressive, who did your tune?

Stepped headers are the way to go.

Any of the 2-1-2 headers from v&h, Fullsac or fuelmoto would be my choice. I don't like the look of v&h ones and they do hit before the board when Leaned over. stainless on the fuelmoto ones is nice but the ceramic ones from Fullsac may run cooler and they also have the sportpipe if ya want to save a little. They will all perform equaly with your set up.
