Default GVWR question

I'm thinking about a trip we are making this summer and have a question about GVWR.
My 07 Ultra Classic has a GVWR of 1259 lbs
The weight of the bike with fluids is 848 lbs.
My weight = 270
ole lady = 130
so 1259 - (848+270+130)= 11 lbs

11 lbs? Is that all the weight I can safely carry in the bags? Or am I thick headed and just don't understand GVWR?

I weigh 300, the wife about 160. I load the bike, pull a trailer and don't worry about it. I have ridden well over 100K miles like this on two different bikes and had no problems.

97 Heritage Classic.... GVW Max 1100-1200#
Actual = +1350#

Luggauge Rack Cap 15#
Actual = + 80#

Saggy Bags Cap 15# Each
Actual = +25# Each

Try to center the load and keep the bulk over the rear axle. On my scoot with the attached load the front end got a little "light" handling wise.

Keep the weight low as possible and as much forward of the rear axle as you can.

But it may still handle like a pig on rollerskates at slow speeds.
