Really, just listen to stuff and go with what you like the best. V&H has a lot of good sound clips on their site as does a lot of other manufacturers. Youtube can help too. Not as good as hearing them in person, but that's often not a possibility.
I installed MGS true duals last month and am very happy with them. Butt dyno says they're better than stock, and they sound great. Nice and deep rumble and loud bark when twisting the throttle, but tone way back while at cruising speeds and dont blow out the radio or ears of everyone around you. Did a 300 mile ride the other weekend and my ears were fine after. Fairly inexpensive when compared to everything else out there too.
Wear ear plugs or your will pay in major hearing loss later. Ask me how I know.
I've been preaching this to everyone I know that rides since forever. Always wear friggin earplugs!
You'd be surprised how many of my riding friends have suffered hearing loss from riding. Exhaust noise aside, even just the road and wind noise sustained for several hours of riding can damage your hearing. In my opinion, your stupid not to wear earplugs when riding! And I don't care if you have a full face helmet or not. It doesn't protect your hearing like plugs can. It's cheap insurance if you ask me!

OK Guys, may be a little too late for me though, loud Rock & Roll in the 60's and 70's, and that '81 Shovel head FXRS I had 30 years ago running WOT with open drag pipes for more than 10 years already took it's toll...
We were first warned about the danger to our hearing by noise, while riding our bikes, back in the mid-1970s, by an excellent article in a US bike magazine, reporting on research by the US forestry industry.
I just bought a 03 with a thunderheader. Only had time to take it for a short ride but it didnt seem to loud to me. I wasnt a fan of the looks till i saw it now i really like it and the sound sealed the deal.
I also had Rinehart 2-1 on my Night Train and always got compliments on how good it sounded even from people riding next to me.
But both these pipes have one hell of a bark to them when you open them up. The Night Train i could keep quiet when needed, I feel the thunderheader should be about the same.
