I use soos idea, with an E track system from mcmaster-carr, mcmaster.com ratchet style versatile end assy. with wire hook and D ring. part no. 8837T11. E track # 88525T17 and a simple spring loaded fitting with D ring, for using your own straps. # 88525T26 everything is rated at 1000# working load. I used 5/16 button head allen bolts so nothing sticks up. the E track lets you move the strap in 2 inch increments the length of the track. and when not transporting the bike, there is nothing sticking up to trip over. about $200 I,ll post pictures when I get back home from this work assignment next week.

Just got back from my dealer and spent an hour with the mechanic doing the PDI on my new Ultra. I asked him how to tie them down and his suggestion as well was to use the engine guard. Only difference he said was at the rear. Instead of using the saddlebag trim (which he says is ok) he uses the rear floorboard mount. This point doesn't have to take a lot of weight, it's just to prevent the rear end from kicking out.
I wouldn't trust the engine guard at all. It has a 3 point fastening and the upper single point is only a 5/16 bolt at best and as Abnmarine states, "Too much flex". I wouldn't tie off to my saddlebag guards either. I wouldn't trust them to hold and I wouldn't want to risk damaging them. My dealer transports to the big rallies and they tie down the way I have pictured earlier. It is rock solid. I also have this in my trailer, it is an MCK2 Tie Down System:
