I am 6'4" and 230. For me, the Sundowner seat with the back rest and 360 degree Kuryakan highway pegs is perfect, however, the further back you go, the smaller your passenger has to get. The Sundowner has a wider seat pan. My wife is 5'2" and 125 and she is fine but I have had some "bigger" passengers and it just doesn't work for very many miles.
I have a hammock seat on my 11 flhrc and I am quite happy with it...at first i thought it was kind of hard but after riding awhile (20 minutes or so) you kind of settle into it and it fits your butt better...
Check out the H-D Hammock or Mustang seats. Personally I like the Mustang Vintage Solo (you can get one with a back rest) and the passenger pillion seat. That way you can have the stripped down look with a solo and no windshield or set it up for 2-up riding with all the gear.
I am 6'2" and weigh around 3 bills, myself...I'm about to go pick up my second seat from C&C...those guys are great! They can also modify the seat to sit you further back...
