However, there is a company that makes some side covers/shields of some type that cove the area were your saddle bags goes. Which would give you the "slim line" that you are looking for. They are either plastic or fiberglass if I remember.

It is your bike so do what plants a smile on your face. As for me, the bag guards have a functionality I want to keep. I like my lockable hard bags, and would not want to give up the space. I even added a detachable tour pack that I only mount on tour or on those rare occasions when my wife rides with me.
