To know the best cam you need to know where you do most of your riding. A good low-end cam will not give you what a good top-end cam will. You need to pick an optimal profile for your riding style.
After that, go check out some manufacturers. Andrews and Woods are the two that come to mind. I think you may be able to find some SE cams for the Evo if you search hard enough.

I will putting in a V Thunder 3000 ( Spanners39 recommended this Cam ) in a few weeks along with new lifters etc...it is supposed to be good from idle to 5000 rpm, designed for heavier bikes. Will let you know the outcome.
Andrews 26 was the go bolt in evo cam as I remember. I had ev3 in my '94 I liked better than 26 that went in when It blew up. But I'm more a rpm/hp guy. Had a ev35 in evo rigid that surprised a few folk.
Andrews EV27 in my '95 EGC. I rarely need a down-shift to pass. Lots of power right in the middle where you'll be needing it...2000-4500rpms. Remember it's only 80 cubic inches so big low rpm numbers just ain't going to happen.
