You are doing it right... Research, plan, and attack. I scoured this and other forums for 6 months before I bought my SGS. I have had it one week now and am in the midst of still figuring out which exhaust I want/need. Looking for that nice rumble, but is also mellow for long trips at cruising speeds.
For a tuner, go with the Power Vision (PV-2) from FuelMoto (lifetime support). The PV-2 (once you tell Jamie what set up you have and he sends you a base map for your bike) has the ability to auto tune right out of the box. It doesn't do it on the fly, but it monitors your driving habits and conditions and will generate a new map for you to load onto your bike. No need to make multiple trips to the dyno to dial it in. You could also purchase the autotune module that will tune it on the fly. Now, I have no personal experience with the PV and this is all from my research thus far but it is what I am going with.
I want to go with a FLHXS and go with V&H big shot duals. What tuner would be my best bet? V&H fuel Pak? Or should I stick with HDs tuner?
Also thought on the breather? Best bet on breather be to stay with V&H and go with a Drak? Or am I better to go with a SEPT?

Just put a HD Screaming Eagle Heavy Breather and a Fuel Pak (third bike/third fuel pak) on my 2013 SG. Never had any problems with them. I have been told in the past though that if you intend to do some engine work in the future, fuel pak should not be your choice.
