Welcome! Change the seat and maybe look into some lowering kits depending on the bike you go with and boots. Good luck and safe travels!

Congrats on passing the MSF course. For being a small bike, Sportsters sit fairly tall unless you get the low model, but as someone else pointed out, the lowered suspension makes for a harsher ride. If it’s within your budget, don’t be afraid to consider a bigger bike. Softails have a pretty low seat height and adding a narrower seat will probably let you get your feet flat on the ground.
