Default Fitment issue?

Hello, I’m reading a lot of mixed things on what exactly will fit on my 07 Night Train. I am putting a 21 x 3.5 wheel in the front and I will be placing a 18 x 5.5 in the rear. The only issue I’m having is when I read about the rear, putting a 200 on the rear with the 18 will make it look narrower which I do not want. So will placing a 210 on it fit and clear? Or will I have to try to find a 17 rear to accommodate the 200 rear tire. I was going to put 80 spoke traditionals on it. I am just unsure now exactly what size rear wheel I will need for it to clear the rear. I know a 210 is the biggest I can squeeze in the back without any modifications. So will upping the wheel size in the rear take up to much room? Am I better off trying to find a 17 rear? The brand wheel I was looking at was Paughco. Thanks for the info.
