I will be doing the same in the next few weeks to my SGS. How difficult was it breaking down the signals? I will be coating my front and rears.
Not bad, take pics as you do it so you re install wiring the way it was. If you transpose the blue and purple wire you get a fast flash in the dash but no light in the signal. My buddy found that out the hard way. There was one tab that was a little tricky. I'll post a pick of it from the service manual. Should help make it easier to get out. The front signals were super easy.
Be prepared for annoying chrome things to start looking out of place. I tore about that many parts off in the beginning. After putting it back together, the uncoated parts were driving me nuts. Things like the front engine mount, kickstand, rocker covers, pushrod sleeves, forks, etc. I wish I would have just done it all at once. At any rate, it's going to look BA so be sure and post pics!

My First Batch:
I still need to do the primary, trans, cam covers, rocker boxes, handlebars and forks. The remaining chrome is driving me nuts. It's only been a week and I'm making plans to get it off. I was trying to wait till next service to not waste fluids. I'll have to post pics. Want that black day maker headlight too!!!

Ahhh, the headlight... I know. It's an addiction and there should be some sort of help for us.
Is there an 'average' when it comes to cost of powder coating? I am wanting to do some items that Harley already sells in black, and was curious if its typically cheaper to have it done on your own?
Yes doing it yourself is way cheaper. I did my bike in black and spent about 500. Everything but the engine. Harley wanted 3000 for the parts alone. I did some parts they dont even offer yet. It was worth it. Love the look and get stopped on the road and asked about it all the time.
