Any seat can be altered. Darn good chance there is some one local you can go to. Sit down with them and figure out what works best for you. The SG does not really have a Touring seat .
I have two seats that have been altered for different reasons.
Corbin trimmed mine in the front since my friend who had it first was short. They did offer that free as a one time service to original buyer. Not sure why since there is truly little between the leather and the shell. Going back has little room. Think you just ought to bite the bullet and start over. Least take a look at Harley's fit a bike where they have the seats designed to move you back and up since that is the only way since the fender is there..if you follow my drift.
I have trimmed 4 seats. It isn't hard to do. Pull the staples, peel the cover back ( on most there is a thin piece of plastic for water proof I guess). I have used an electric carving knife( what you carve your Turkey with)to get the basic shape then I go to 40 grit sandpaper and smooth it out with 80 grit pull the cover back on and restaple. Check often for your seating position because it is easier to take foam off then it is to add.

Yup, works great! I have done this twice with great results. After carving with knife (electric carving knife) I finish form with 30grit sandpaper.
On my 2016 SG I asked mean city about moving me back in the stock seat. They said the seat pan is already against the rear of your back and therefore on that particular seat you cannot move back. I ended up buying a tall boy seat and have been happy.
Lucky for me here in Denver we have a guy (Bitchin Stichin) that does great work - most of the time he likes to work with Mustang seats as there usually isn't much room to change the stock HD seat - especially the pillion area
