Thinking hard about tackling a bar change before storage. I'm a little amazed that some folks say they can do it in 1.5-2hrs. Others say the dealership charged them $800 labor?
$400 an hour sounds a bit steep for this retired blue collar worker. Once a tech does this a few times it must be easy money at that rate.

No need to remove tank or fairing, just unbolt it and lift it up and roll the top foward to access bolts.
Cover paint well with towels etc.
