One of the things I love about my bike is the ability to change her for whatever I want to do.
I had the Ultra Limited a few years back and set it up to be Street Glide or Ultra ready with all the quick detach hardware. Never really took the tour pack off and realized it actually handled and rode better in stock form than in the modified Street Glide version. (Should have never gotten rid of that bike).
Traded it for a hot rod 2008 Dyna with a 110 engine that I chromed out, and rode the **** out of, but eventually added saddlebags and windshield, sissy bar and rear pegs for my wife. Of course, she hated it and I would hear constantly about rides "we could've gone on if we had a bagger"...good grief.
Traded the Dyna in April 2016 and bought the RGU. I have avoided buying any detach hardware but have enjoyed adjusting small things on the bike and added a solo seat, removed the tour pack, and have been toying with idea of apes. Always changing...
A few weeks back I rode a bunch of bikes at the Demo event at our local dealer and of all the bikes I rode, I really enjoyed the Ultra Limited CVO the most. Every bike was fun(well except that damned 750 street rod), but I just loved that CVO Ultra.
Last weekend I put my stock seat back on and added the back rest, Added the tour pack back on. (Drilled the mounting plate holes to allow another 3/4 adjustment back from the stock setting so wife is happier) and when I rode the bike I was surprised to realize it felt like the CVO, except it didn't require a 45k loan! Not that I was contemplating that.
It was just amazing to me how much I enjoyed the "new" bike and made me realize the joy of having the parts in my garage to swap to whatever style i need or want at that time. The Ultra is an amazing bike but does get a bit heavy at times and the desire for a lighter, smaller bike is there when I want to whip out of a traffic jam, but theres nothing like the big rig rolling down the highway.
Couldnt agree with you more. I also installed the quick release kit on my 2016 RGU. Nice to have versatility when you are taking the 2 wheeler out for a ride. As for the CVO... They look nice but My bike will easily go as fast as the law will allow.
I coughed up for the quick detach kit on two previous ultras because I completely agree that the ultimate bike is multi purpose bike. On my current bike a 14 cvo limited, I just remove the 4 bolts to remove the tour pack. It looks cleaner than the 4 mounting points the detach kit uses. Saved 600 bucks. Easy to get it off and on.

Kit I got came with turn signals for the bags. Did you add signals? What about license plate?

I have removed my TP 16 RGU, added the RGS seat and it is a blast for short runs but I always go back to the cushy seat and putting the TP back on. It is easy to do with just removing the 4 bolts and the license plate bracket which you can buy without buying the whole quick detach kit. The best part about having the TP off, is swinging the leg over the seat rather than stepping over the seat.

I have done the same thing, saved lots of $$$$, you forgot to mention, with the 4 point docking a thief could very quickly and easily steal your TP.
The weight of the tourpack smooths the ride out in my experience. I have Progressive 444HDs on my SGS and I can say that with tourpack and comfort seat on it's every bit as smooth as the 2017 CVO Ultra I rode.
I typically ride without it because I like the nimbleness one gains. But when I do have it on, I'm never worried about it being stolen. I have the quick release locks. The thief would have to be pretty determined.
