I have a 2020 limited. I can make a call and they hear me great. However I can barely hear anyone? Turned volume up on the phone, up on the headset, up with the volume button on handle bar. What am I missing?

What are you missing? Your sense of hearing!! Just kidding.
Are you turning the volume up on the handlebar while being on the phone? On the Boom systems each function has its own volume control. Each are volume controlled separately. Music, Nav Prompts and Phone volume needs to be adjusted in that mode, while in that mode.
Also check that your phone's volume is really turned up. I know on my androids while in bluetooth, the volume stops at 3/4 and gives you a warning about excessive volume. You have to go past that to get turned up to max.
Forgot to say, I have iPhone 7 Plus. Yes, I have turned volume up on handle bar as I was talking on phone. Also max volume setting on iPhone. I know I am missing something and I assume it’s a silly setting I am missing? Just trying to figure it out. I also have the 30s sena that I have on max volume. And I must add........my wife does say I don’t listen very good? But I really thought that was different than hearing?

Is the sena headset connected to the bike and the phone bluetoothed? Headset volume is another separate volume control as well, I believe. I never really used a headset.
I have a 2019 CVO Limited with an iPhone 7 having the same issue, I have turned up the volume on the phone, on the bike while on the phone and on the headset.
