I'm not one of the gurus around here but from my experience it sounds like you have a solid plan that will end up way below the budget you have. 4 MMATS is about $400 ish and the stinger can be had for under 200. So if your willing to go 3 large you can do some crazy stuff.
Good luck with you build, the wiring should be no big deal for you, and I'm sure some awesome options will be put out for you.

I have 4 601.cx 2 in fairing and 2 in lowers. I have them powered by a stinger spx700x4. I also have 2 Mmats 601.4's in the tour pak to by powered by a NVX VADM4 that I have not hooked up yet. have you thought about lowers? Great bang for the buck. You will also need a spacer for the tour pak to fit the Mmats. I hav the Vtwin audio spacers they are 100.00 but look great!

OP you can keep your stock head unit. I got Iron Cross to add preamp outputs to mine and fed them into an Arc PSM DSP. I also got the Metra SaddleTramp bluetooth module so I could control it with the thumb controls. The Iron Cross bluetooth add on only streams audio, you cannot skip forward and back on tracks. If you do get the preamp outputs added when you hook up your amp test the turn on and off to see if you get a pop through the speakers. If you do putting a cheap PAC SNI-1 ground loop isolator on each set of preamp outputs should stop that (it's what I had to do). I have heard from a friend though that the Stinger amp has good internal filtering and may not require those.

Lowers definitely help you hear the music better without having to crank it real loud, but to run six speakers and blend them properly you would need another small amp maybe to run the rear pods. I run my four front speakers on the front of my fader control and the rear four on the back so I can blend them at speed. I used the level adjustments on my DSP to blend the fairing speakers and lowers properly. The lowers will need to play a little louder than the fairing speakers in order to be heard properly.

If you don't want to get into all that the Stinger for the four speakers you have will probably be fine. I opted for the Arc Moto 600.4 amp because with four ohm speakers it puts out more power and isn't much larger. It is also kind to FM reception (I have heard the Stinger is too).

I am not a fan of the stock HU I like an after market sony or Kenwood with a handlebar control module. Cheaper and better sounding than the stock harley.
You can send the HU in to iron cross and get RCA per outs and Bluetooth they also fix the faulty motherboard issues. That costs about 400.
Stunger spx700x4 200
MMats 601.cx (4) 400.00
Vtwin audio adapter 100
install kit 50
