I also have a 14 Fat Bob in Vivid Black. I installed a set of V&H 3" slip-ons and they sound great. I picked up the bike in November and only rode it back from the dealer. It's been sitting in my shed ever since.
As far as the pegs, I always feel like my feet are going to slip off due to the angle of my legs so I bought a pair of Kuryakan ISO pegs a heal rest. I haven't installed them yet though. They should eliminate the feeling of my feet slipping off the pegs. I too don't like leaning the bike over to extend the jiffy stand, but oh well, I will get used to it.
I've got the floorboards on my Fatty & very happy with them. Only issue I have found is some scraping around corners. But I'm not sure I would have much more clearance with the forward controls either. Congrats!! & props for stashing all the cool stuff at the GFs so the wifey doesn't find out

They were on when I bought the bike but I believe they look like the V-Twin Manufacturing floorboards. Nothin fancy & look like something that would come stock. Heres a not so good photo of them.
