I can't be of any help when it comes to the fairing. But as far as bags go I recommend the leather Pro bags. They're the only ones where you don't have to relocate the license plate and turn signals. Plus they're quick detach. So when you take them off the bike still look stock.

Assuming you picked up a stock FXDB, your money is going to be best invested in better suspension, better handlebars, and a better seat. Your bike is setup at maybe 50% of its potential from the factory - and that's not unintentional. Changing the suspension, seat, and bar position will take your bike to the next level without getting into engine work. Tons of threads here on the forums on all the above.
After that - exhaust + intake + tuner. Each of these are pretty expensive, but it's in your best interest to do all three of these at the same time. The tune will need to be specific to your exhaust + intake combination. Your bike will run like crap if you do one of these without the others. Check out fuelmoto.com for more info on tuners, those guys are super helpful and have a great selection.
Fairings - in my opinion, plastic is plastic. By that I mean buy the cheapest version of the style you like and then invest in good brackets (like the ones from BungKing.com). When they started getting popular during the SOA days, you had to buy the "real" versions, but now there are tons of cheaper knock offs of pretty much every style of fairing. For example, if you want the quarter fairing, the "official" Harley version will cost you $$$$, but the knockoff versions are just as good - check Amazon and Ebay. Click around on this site until you find the style you like, then start looking at the brands who make that style.
The Street Bob is a good bike but man oh man does it take some work to start making it a great bike! Have fun and ask a lot of questions!
