Picked up a new leftover 2017 Fat Bob this past week, first Harley, first cruiser, first air cooled v-twin... come from years of sport bikes, dirt bikes and have lived up a 5 mile dead end dirt road for the past 10 years, so a good amount of dual-sports..
Put my first 100 miles on the bike this afternoon... loved it, told my wife when I got home "I should have bought one of these years ago...." loved the way it runs, handles, etc... point being that I love the bike. Folllowed the below 3k for 100 miles etc
Got home, parked it in front of the barn, let it sit for about a half hour.... started it to put her in the garage, and the throttle surged to 3600 RPM, engine light comes on, drops to below a grand and then dies... start a few more times and can keep it running at idle with a bit of throttle but otherwise it would die.
Give it an hour to cool off and it's like nothing happened.
Again, we live 5 miles up a dirt road, and it had been fireshly graded this week, so I was coming up the hill at about 30 MPH after an afternoon of riding... wondering if it just got too hot? Should I take it back to the dearlership? I'm admittedly ignorant on these bikes and appreciate any one's help. Thanks in advance.

If you just got the bike this week, don't mess around and get it to the dealer. If the check engine light came on you should check for codes.
Well done on choosing a great bike. Although I've not had the same problem of surging with my 2014 Low Rider, I agree with the advice to ask the dealer to check it out. It might not ever happen again, but it would be worth insisting that your dealer notes what happened, just in case it were to happen again.
Took the bike to the dealership Saturday, had them check for codes and see if they could get the issue to reappear... no dice, and they called the codes "historic"... not sure what that means.
Put about 150 miles on her today and same issue.... stalls at idle, surges at start, check engine light comes on then disappears.... issue comes and goes.. turning the bike off and letting it sit seems to work sometimes as does just riding it... heat issue? Hoping I didn't drop a fair amount of coin on a lemon. At any rate, beautiful day and Americade (Lake George NY) seems ready to go.
Other than that's what the dealership said was the issue, I have no idea.... could be an important part of the idle air control, could be the dealership equivalent of a muffler bearing... what I do know is that the bike runs as it should and it was covered under warranty.
